Banana Cookies Recipe

Ingredients: 1 cup all-purpose flour 1 teaspoon baking powder

½ teaspoon baking soda ¼ teaspoon salt ½ cup (1 stick) unsalted butter, at room temperature

¾ cup packed light brown sugar or dark muscovado sugar* *I used dark muscovado sugar. It’s what I had on hand and it worked perfectly. You could also use light brown sugar or even granulated white sugar.

Just know that the flavor of your cookies will be affected by the type of sugar you use. 2 large eggs, beaten   1 teaspoon pure vanilla extract  

3 ripe bananas, mashed with a fork (about 1 cup)   1/3 to ½ cup chopped nuts or chocolate chips (optional) *I used chopped walnuts because that’s what I had on hand. You could also use chopped pecans, almonds, hazelnuts, peanuts, cashews… really any kind of nut you like or have on hand.

Or you could omit the nuts altogether and add chocolate chips instead. Or do half nuts and half chocolate chips. It’s totally up to you!

Instructions: Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.* I always line my baking sheets with parchment paper because it makes for easy cleanup and ensures that my cookies will slide right off the pan when they’re done baking. But if you don’t have any parchment paper on hand, a silicone baking mat will work just as well. In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside. In the bowl of your electric mixer** fitted with the paddle attachment , beat butter on medium speed until creamy; about 2 minutes . Add brown sugar (or muscovado sugar) and continue beating until light and fluffy; another 2 minutes . With mixer still running on medium speed , add eggs one at a time , mixing each in until fully incorporated before adding the next; mix in vanilla extract . With mixer still running slowly incorporate dry ingredients into wet ingredients ; mix only until just combined . Be careful not to overmix ! Stir in mashed bananas , then fold in chopped nuts or chocolate chips , if using . Drop dough by rounded tablespoons onto prepared cookie sheet .
